面筋是植物性蛋白质，由麦醇溶蛋白和麦谷蛋白组成。将面粉加入适量水、少许食盐，搅匀上劲，形成面团，稍后用清水反复搓洗，把面团中的淀粉和其它杂质全部洗掉，剩下的即是面筋。油面筋用手团成球形，投入热油锅内炸至金黄色捞出即成。将洗好的面筋投入沸水锅内煮80分钟至熟，即是“水面筋”。
