Gluten is a vegetable protein consisting of gliadin and glutenin. Add the flour to the right amount of water, a little salt, stir well, form a dough, and then rinse with water repeatedly, wash the starch and other impurities in the dough, the rest is gluten. The oil gluten is put into a spherical shape by hand, and it is put into a hot oil pan and fried until golden brown is taken out. Put the washed gluten into a boiling water pot and cook for 80 minutes until cooked, which is “water gluten”.
